How do you grill a dream?
Can you smell it too? Yes, as Honza and David Kaňák proudly tell it, this is a story with a strong aroma of passion. And we agree! Combining the great dream of two determined men with the clout of a stepfather who believed in their business vision has brought great success. The gastronomic offer of the modest food truck in the streets of Ostrava gradually found its fans. The Kaňák brothers’ burgers were in increasing demand, leading to the opening of their own bistro in the heart of Ostrava.
“And then it came! In 2017, our fortunes changed dramatically when we became stars of the TV show ‘Yes, Chef!’. Zdeněk Pohlreich, the acclaimed TV chef, was so excited by our burgers that he awarded us three stars and attracted al the public interest. He’s become our mentor and our companion in the new concept of Mama’s products and franchise development,” recount the Kaňák siblings with enthusiasm.
And why Mama’s Bistro? It’s a great tribute and big thanks to the mother who supported the brothers in their business dream from the beginning, who worked and rode with them and is still part of their gastro operation today. “It’s also an indirect thank-you to all the mothers who support their children in their dreams,” say Honza and David.
And in addition to the mouthwatering fragrances of this passionate story, we’ll also be able to soak up the actual smells of the much-lauded burgers (rightly referred to as “Michelin-star fast food”) in Nová Zbrojovka in just a few weeks. So what’s so special about them?

It all starts with the choice of ingredients. And we really don’t mean a quick shop at the gastro wholesale before the opening the bistro. When making their choice, the chef must literally fondle the food, using detective skills to find exactly what fits their gastronomic concept. So Mama’s burgers owe their success to using only the highest quality meat from Czech farms, handmade buns prepared to measure from a local bakery, fries from specially bred potatoes (ATTENTION – fried twice) and, of course, homemade dressings. And of course, all this is fresh, including the meat that is processed on site.

All roads lead to Nová Zbrojovka
After Ostrava and Olomouc, now it’s time to introduce the taste of these gourmet burgers with guaranteed top quality in Brno as well. By the way, at the moment it’s the only concept in Moravia to which Zdeněk Pohlreich has signed his name.
And we’re honoured that they chose to present their concept at our Hrad, a space in the iconic building of the former Zbrojovka headquarters (at Lazaretní 1/7) which has undergone a complete renovation and combined its historical legacy with superior fittings inspired by the latest trends. “Besides excellent transport links for Brno and non-Brno gastro enthusiasts, in the future we see great potential in Nová Zbrojovka right at the place of operation. A new city district is being created here where thousands of people will eventually move to live, work or just spend their free time,” Kateřina Janyšková, the operations manager of Mama’s Bistro in Brno, explains the main reasons for choosing the location.
In addition to offering classic burgers, you can also look forward to the breakfast concept of Mama’s Bistro. Specific recipes are created in collaboration with Zdeněk Pohlreich and the Kaňák brothers. Maybe we can declassify one of the earliest creations – the breakfast UFO burger.
